How To Grow
- Soak the peas by covering them with plenty of cold water and soak for 8-24 hours (24 hours speeds up germination.
- Then drain and rinse under cold water, discarding any that have not swelled or look damaged.
- Fill a tray or pot with moist compost. Level it and firm it down. Water the surface so it’s damp but not water logged. Good drainage is important to prevent rot.
- Spread the soaked peas evenly over the compost surface. Sow them quite densely – close together but not quite touching. This will create a thick forest of shoots. Cover them lightly with a thin layer of compost.
- Gently water again to settle them in.
- Place in a sunny position indoors, or if outdoors wait until early May and protect from any late frosts.
- Shoots should emerge in a few days and grow quickly. Keep them in a bright place.
- Water regularly and keep a good airflow to prevent any mould.
- No fertiliser is required.
- Start a new tray every 1-2 weeks for a continuous tender supply.
How To Harvest
- Pea Shoots are typically ready in 10-21 days, when they’re about 10-15 cm tall and have developed a few sets of leaves (including the tender tendrils at the top).
- Harvest by snipping the tops with clean scissors, leaving at least 2-5cm of stem above the soil. This will allow continued growth.
- Eat fresh in salads, stir fries, sandwiches or as a garnish.
- Best used fresh but will keep in the fridge for a day or two.
